Ingredients:
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 3 large egg yolks
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 2 tablespoons raspberry jam
- 2 tablespoons turbinado sugar
Instructions:
1. Preheat the oven to 325 degrees F.
2. In a medium saucepan, heat the cream and sugar over medium-high heat until the mixture just starts to simmer.
3. In a medium bowl, whisk together the yolks, vanilla, and salt. Slowly whisk in the warm cream mixture until combined.
4. Divide the custard among four 6-ounce ramekins.
5. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
6. Bake the custards for 20-25 minutes, until they are just set.
7. Remove the ramekins from the water bath and let cool.
8. Once cooled, spread 1/2 tablespoon of raspberry jam over each custard. Sprinkle 1/2 tablespoon turbinado sugar over each custard.
9. Using a kitchen torch, caramelize the sugar and jam until golden brown.
