Vegetable Fried Rice
Ingredients:
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1/2 cup diced onion
- 1 cup diced carrots
- 1 cup diced bell peppers
- 1 cup diced mushrooms
- 2 cups cooked white rice
- 2 tablespoons soy sauce
- 1/4 teaspoon ground black pepper
- 1/4 cup frozen peas
Instructions:
1. Heat oil in a large skillet over medium heat.
2. Add garlic, onion, carrots, bell peppers and mushrooms. Cook, stirring occasionally, until vegetables are tender, about 5 minutes.
3. Add cooked rice, soy sauce and pepper. Stir to combine.
4. Add frozen peas and cook for an additional 3-4 minutes, stirring occasionally.
5. Serve warm. Enjoy!
