Veggie-Packed Omelette:
Ingredients:
- 2 eggs
- 2 tablespoons of milk
- 1 tablespoon of butter
- 1/4 cup of chopped red bell pepper
- 1/4 cup of chopped green bell pepper
- 1/4 cup of chopped mushrooms
- 1/4 cup of chopped onion
- Salt and pepper to taste
Instructions:
1. In a medium bowl, whisk together the eggs and milk until combined.
2. Heat the butter in a large nonstick skillet over medium heat.
3. Add the bell peppers, mushrooms, and onion to the skillet and cook until softened, about 5 minutes.
4. Pour the egg mixture into the skillet and season with salt and pepper.
5. Cook until the eggs are set, about 5 minutes.
6. Gently fold the omelette in half and cook for an additional 2 minutes.
7. Slide the omelette onto a plate and enjoy!
