Egg and Cheese Breakfast Quesadilla
Ingredients:
- 2 large flour tortillas
- 2 eggs, beaten
- 1/2 cup shredded cheese
- 2 tablespoons butter
- Salt and pepper, to taste
Instructions:
1. Heat a large skillet over medium heat.
2. Spread butter on one side of a tortilla and place in the skillet butter side down.
3. Sprinkle half of the cheese over the tortilla.
4. Pour the beaten eggs over the cheese and season with salt and pepper.
5. Top with the remaining cheese and the other tortilla.
6. Cook for 3-4 minutes, until the bottom tortilla is golden brown.
7. Carefully flip the quesadilla and cook an additional 3-4 minutes, until the other side is golden brown and the cheese is melted.
8. Slice into wedges and serve. Enjoy!
