Vegetarian Stuffed Peppers
Ingredients:
- 4 bell peppers, any color
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (14.5-ounce) can diced tomatoes, with juices
- 1 cup cooked quinoa
- 2 tablespoons chopped fresh cilantro
- 1/2 cup grated vegan cheese
- 1/4 cup sliced black olives
Instructions:
1. Preheat oven to 375°F.
2. Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the peppers in a baking dish.
3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
4. Add the cumin, paprika, oregano, salt and pepper and stir to combine.
5. Add the black beans, tomatoes, quinoa and cilantro and stir to combine. Cook for 5 minutes.
6. Remove from heat and stir in the vegan cheese and olives.
