Banana Walnut Pancakes
Ingredients:
-1 cup all-purpose flour
-1 teaspoon baking powder
-1/4 teaspoon baking soda
-1/4 teaspoon salt
-1/4 cup granulated sugar
-1/4 cup chopped walnuts
-1 large ripe banana, mashed
-1 cup buttermilk
-2 tablespoons vegetable oil
-1 large egg
-1 teaspoon vanilla extract
Instructions:
1. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
2. Stir in the walnuts.
3. In a separate bowl, mix together the mashed banana, buttermilk, oil, egg, and vanilla extract.
4. Pour the wet ingredients into the dry ingredients and stir until just combined.
5. Heat a non-stick skillet over medium heat.
6. Grease the skillet with butter or oil.
7. Pour 1/4 cup of the batter onto the skillet.
8. Cook until the edges start to look dry and bubbles form on the surface.
9. Flip the pancake and cook for another 1-2 minutes.
10. Repeat with the remaining batter.
11. Serve the pancakes with butter, syrup, and extra chopped walnuts. Enjoy!
