Egg and Bacon Breakfast Burrito
Ingredients:
- 4 large eggs
- 4 slices bacon, cooked and crumbled
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 4 large flour tortillas
- Salt and pepper to taste
Instructions:
1. In a medium bowl, whisk together the eggs, salt, and pepper.
2. Heat a large skillet over medium heat and add the eggs. Cook, stirring occasionally, until the eggs are scrambled and cooked through.
3. Remove the eggs from the skillet and set aside.
4. In the same skillet, cook the bacon until it is crispy. Remove the bacon from the skillet and set aside.
5. In the same skillet, add the onions and bell peppers and cook until softened, about 3 minutes.
6. Add the eggs and bacon back to the skillet and stir to combine.
7. Place a flour tortilla on a plate and spoon the egg and bacon mixture into the center.
8. Sprinkle with the cheddar cheese and fold the tortilla over the filling.
9. Repeat with the remaining ingredients.
10. Serve with salsa and sour cream, if desired. Enjoy!
